Seared Salmon with Quick Garlicky Roma Tomato Sauce

Fast, bright stovetop salmon with a simple garlicky tomato pan sauce. Uses winter-friendly citrus/tomato staples and an on-sale protein.

Ingredients

  • Atlantic Salmon Center Cut (on sale) 8 oz (2 x 4 oz portions) $10.99 (sale)
  • Fresh Roma Tomato (on sale) 3 medium, diced $0.99/lb (sale)
  • Kroger® Peeled Garlic 2 cloves, minced $2.99 (6 oz)
  • Parsley 1/4 bunch, chopped $0.99
  • Olive oil 2 tbsp
  • Kosher salt & black pepper to taste

Instructions

  1. Pat salmon dry; season with salt and pepper.
  2. Heat 1 tbsp olive oil in a skillet over medium-high. Sear salmon 3–4 min, flip 2–3 min. Remove to a plate.
  3. Lower heat to medium. Add remaining 1 tbsp oil and garlic; cook 20–30 seconds.
  4. Add diced Roma tomatoes and a pinch of salt; cook 5–7 minutes until saucy.
  5. Return salmon to the pan for 30–60 seconds to warm through. Top with chopped parsley and serve.

Health notes: High protein and omega-3s; moderate calories. Keep it lighter by using less oil and serving with extra veg if desired.

Drink pairing: Vermentino or Albariño (zesty, citrus-friendly), or a light Pinot Noir.

30-Minute Lime-Garlic Kale & Sautéed Mushrooms

A 20-minute stir-fry-style side/main that leans into February greens. Great with rice or noodles if you have them (optional, not counted).

Ingredients

Instructions

  1. Heat olive oil in a large skillet over medium-high.
  2. Add mushrooms; cook 5–7 minutes until browned.
  3. Add garlic; cook 30 seconds.
  4. Add kale with a splash of water (2 tbsp). Cover 1–2 minutes to steam, then uncover and toss until tender (2–3 minutes).
  5. Season with salt and pepper; finish with lime juice off heat.

Health notes: High fiber and micronutrients from kale; mushrooms add umami with low calories.

Grilled Lemon-Garlic Shrimp & Asparagus

Super-quick grilled shrimp with asparagus—peak timing for CA asparagus in late winter/early spring, plus a simple lemon finish.

Ingredients

  • White Shrimp Raw 13/15 (on sale) 1 lb, peeled/deveined $12.99/lb (sale)
  • Green Asparagus (on sale) 1 lb, trimmed $2.99 (sale)

Instructions

  1. Heat grill to medium-high (about 450°F).
  2. Toss shrimp and asparagus with olive oil, garlic, salt, pepper, and lemon zest.
  3. Grill asparagus 6–8 minutes total, turning occasionally, until crisp-tender.
  4. Grill shrimp 1–2 minutes per side until pink and just firm.
  5. Finish everything with lemon juice and serve immediately.
