Fast, bright stovetop salmon with a simple garlicky tomato pan sauce. Uses winter-friendly citrus/tomato staples and an on-sale protein.

- Atlantic Salmon Center Cut (on sale) 8 oz (2 x 4 oz portions) $10.99 (sale)
- Fresh Roma Tomato (on sale) 3 medium, diced $0.99/lb (sale)
- Kroger® Peeled Garlic 2 cloves, minced $2.99 (6 oz)
- Parsley 1/4 bunch, chopped $0.99
- Olive oil 2 tbsp
- Kosher salt & black pepper to taste
Instructions
- Pat salmon dry; season with salt and pepper.
- Heat 1 tbsp olive oil in a skillet over medium-high. Sear salmon 3–4 min, flip 2–3 min. Remove to a plate.
- Lower heat to medium. Add remaining 1 tbsp oil and garlic; cook 20–30 seconds.
- Add diced Roma tomatoes and a pinch of salt; cook 5–7 minutes until saucy.
- Return salmon to the pan for 30–60 seconds to warm through. Top with chopped parsley and serve.
Health notes: High protein and omega-3s; moderate calories. Keep it lighter by using less oil and serving with extra veg if desired.
Drink pairing: Vermentino or Albariño (zesty, citrus-friendly), or a light Pinot Noir.
