Instructions

  1. 1. Thinly slice 1 large sweet onion, mince 2 garlic cloves, shuck 2 ears bi-color corn and cut off the kernels, zest and juice 1 lemon, and chop 1/4 cup cilantro.
  2. 2. Combine 1 pound boneless skinless chicken thighs with the zest and juice of 1 lemon, 2 tablespoons Dijon mustard, 2 minced garlic cloves, 1/4 teaspoon cayenne pepper, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper; marinate for 10 minutes.
  3. 3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the kernels from 2 ears bi-color corn in an even layer, season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper, and cook for 4 to 5 minutes, stirring only occasionally, until tender and charred in spots; transfer to a plate.
