Instructions

  1. Thinly slice 1 large sweet onion, mince 2 garlic cloves, shuck 2 ears bi-color corn and cut off the kernels, zest and juice 1 lemon, and chop 1/4 cup cilantro.
  2. Combine 1 pound boneless skinless chicken thighs with the zest and juice of 1 lemon, 2 tablespoons Dijon mustard, 2 minced garlic cloves, 1/4 teaspoon cayenne pepper, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper; marinate for 10 minutes.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Instructions
