Ingredients

  • Spinach 1/2 bunch or about 4 oz $2.69
  • Kroger® Chicken Broth or Simple Truth Chicken Broth 1/4 cup $1.79
  • Pantry: olive oil 1 tbsp
  • Pantry: salt 1 tsp
  • Pantry: black pepper 1/2 tsp
  • Pantry: Italian seasoning 1 tsp
  • Pantry: breadcrumbs 1/4 cup
  • Pantry: egg 1

Instructions

  1. In a bowl, mix ground turkey, 1 minced garlic clove, half the finely chopped onion, breadcrumbs, egg, 1/2 teaspoon salt, 1/4 teaspoon pepper, and Italian seasoning.
  2. Form into small meatballs.
  3. Heat olive oil in a large skillet over medium heat. Brown meatballs for 5 to 6 minutes, turning occasionally.
  4. Add remaining onion and garlic; cook 2 minutes.
  5. Add chopped tomatoes and broth. Simmer 10 minutes until meatballs are cooked through.
  6. Stir in spinach and cook 1 to 2 minutes until wilted.
  7. Serve in shallow bowls with sauce spooned over the top.
