A sheet-pan chicken dinner using red onion, red bell pepper, and tomatoes for a monochrome red presentation.

Ingredients

  • Boneless Skinless Chicken Thighs 1 package $5.49
  • Organic Red Onion 1 large $2.69
  • Organic Red Bell Pepper 2 $3.99
  • Organic Cocktail Tomato 1 pint $6.49
  • Olive oil 2 tablespoons
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat oven to 425°F.
  2. Cut the red onion into wedges and slice the red bell peppers.
  3. Place the chicken, onion, peppers, and tomatoes on a sheet pan.
  4. Drizzle with olive oil and season with salt and black pepper.
  5. Roast for 25 to 30 minutes until the chicken is cooked through and the vegetables are tender.
  6. Serve with the roasted tomatoes spooned over the chicken.
