Grilled Smoky Shrimp Skewers with Dill-Yogurt Dip

Ingredients

  • Kroger® Extra Large Raw Shrimp Peeled and Deveined Tail Off, 12 oz 12 oz $6.99 sale
  • Organic Ginger Root 1 tsp grated (optional) $5.99/lb
  • Simple Truth Organic® Baby Dill 1 tbsp chopped $2.79
  • Pantry: olive oil 1 tbsp
  • Pantry: smoked paprika (or chili powder) 1 tsp
  • Pantry: garlic powder 1/2 tsp
  • Pantry: salt, pepper to taste
  • Pantry: lemon 1
  • Pantry: plain Greek yogurt 1/2 cup

Instructions

  1. Prep: Pat shrimp dry. Toss with olive oil, smoked paprika, garlic powder, salt, pepper, and lemon zest/juice.
  2. Skewer: Thread shrimp onto skewers (or use grill basket).
  3. Grill: Medium-high heat, 1.5–2 minutes per side until pink and firm.
  4. Dip: Mix Greek yogurt + dill + pinch of salt + squeeze of lemon. (Add grated ginger if you want a little zip—optional.)
  5. Serve: Serve skewers warm with dip.

Health notes: Very high protein, low carb; yogurt dip keeps it lighter than mayo-based sauces.

Drink pairing: Grapefruit sparkling water or a crisp pilsner.
