Pan-Seared Ribeye with Brussels Sprouts & Asparagus

Ingredients

  • Simple Truth® Natural Grass Fed Angus Beef Ribeye Steak 2 steaks or 20 oz total $19.99/10 oz
  • Brussels Sprouts 1 lb $3.99/lb
  • Green Asparagus 1 lb $4.99/lb sale
  • Olive oil 2 tablespoons pantry
  • Salt to taste pantry
  • Black pepper to taste pantry

Instructions

  1. Heat oven to 425°F.
  2. Trim the Brussels sprouts and asparagus.
  3. Toss vegetables with 1 tablespoon olive oil, salt, and pepper on a sheet pan.
  4. Roast 15 to 20 minutes until tender and browned.
  5. Meanwhile, season ribeye with remaining oil, salt, and pepper.
  6. Sear in a hot skillet 3 to 4 minutes per side, then rest 5 minutes.
  7. Serve steaks with the roasted green vegetables.
