Georgian Tomato Chicken with Zucchini

Instructions

  1. Before turning on the stove, dice 8 oz yellow onion, cut 12 oz zucchini into 3/4-inch pieces, mince 4 garlic cloves, chop 1 lb Roma tomatoes, and chop 1/2 cup cilantro; keep 6 tbsp and 2 tbsp chopped cilantro separate. Pat 1 1/2 lb bone-in, skin-on chicken thighs dry.
  2. Season the 1 1/2 lb chicken thighs with 2 tsp Diamond Crystal kosher salt or 1 1/4 tsp Morton kosher salt and 1/2 tsp black pepper. Heat 1 tbsp olive oil in a deep skillet over medium-high heat; sear the chicken skin-side down for 5 minutes, flip and sear for 3 minutes, then transfer it to a plate.
  3. Add the prepared 8 oz diced yellow onion, 12 oz zucchini, and 1 tsp Diamond Crystal kosher salt or 1/2 tsp Morton kosher salt to the skillet. Cook over medium heat for 6 minutes, stirring occasionally.
  4. Add the prepared 4 minced garlic cloves, 1 tsp ground coriander, 1 tsp sweet paprika, and 1/4 tsp crushed red pepper; stir for 1 minute.
  5. Add the prepared 1 lb chopped Roma tomatoes, 1/2 cup water, and 1 tsp Diamond Crystal kosher salt or 3/4 tsp Morton kosher salt, scraping up the browned bits. Return the 1 1/2 lb seared chicken thighs skin-side up, cover, and simmer gently for 20–22 minutes, until the thickest part reaches 165°F.
  6. Remove the skillet from the heat, stir 6 tbsp chopped cilantro and 2 tsp red wine vinegar into the sauce without wetting the chicken skin, and rest uncovered for 5 minutes.
  7. Spoon the tomato-zucchini sauce into two shallow bowls, top with the chicken, and garnish with 2 tbsp chopped cilantro.
