  • Gotham Greens® Butterhead Living Lettuce 1 head (use leaves as cups) $3.99
  • Certified Angus Beef 90/10 Ground Sirloin 8–10 oz $9.99
  • Organic Jumbo Red Onions 1/4 onion, minced $2.99
  • Fresh Organic Large Ripe Avocado 1 $3.50
  • Organic Cucumber 1/2, diced small $1.49
  • Pantry: olive oil 1 tsp
  • Pantry: salt, pepper, cumin or chili powder to taste
  • Pantry: lime/lemon 1
  • Pantry: hot sauce (optional) to taste

Instructions

  1. Cook beef (stove): Heat a skillet over medium-high. Add oil, then beef and minced red onion. Cook 6–8 minutes, breaking up, until browned. Season with salt, pepper, and a pinch of cumin/chili powder. Drain excess fat if needed.
  2. Make quick avocado topping: Mash avocado with a squeeze of lime/lemon, salt, and pepper. Stir in diced cucumber (and a dash of hot sauce if you want).
  3. Assemble: Spoon beef into lettuce leaves. Top with avocado-cucumber mix. Serve as handheld cups.

Health notes: High protein + fiber; low added sugar. Keep sodium moderate by seasoning lightly.

Drink pairing: Sparkling water with lime (or a light lager).
