Calabrian Sausage-Pepper Cavatappi

Instructions

  1. Slice 1 large red bell pepper into thin strips, dice 4 ounces yellow onion, mince 2 garlic cloves, finely grate 1 ounce Parmesan, and crumble 5 ounces hot pork sausage.
  2. Bring 3 quarts water and 3/4 teaspoon kosher salt to a boil in a large pot. Add 5 ounces cavatappi and cook for 9 to 11 minutes until al dente; prepare the sauce while it cooks.
  3. Heat 2 teaspoons extra-virgin olive oil in a large skillet over medium-high heat. Add 5 ounces crumbled hot pork sausage and sauté for 4 to 5 minutes, breaking it into small browned pieces.
  4. Add 1 large sliced red bell pepper and 4 ounces diced yellow onion to the skillet; sauté for 5 to 6 minutes until lightly browned. Stir in 2 minced garlic cloves, 1/2 teaspoon crushed red pepper flakes, and 1/2 teaspoon dried oregano for 30 seconds.
  5. Stir in 1 cup crushed tomatoes, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Reduce the heat to medium-low and simmer for 6 to 8 minutes, until slightly thickened.
  6. Drain the cooked cavatappi and transfer it to the skillet. Add 1 ounce finely grated Parmesan and toss over low heat for 1 to 2 minutes, until the sauce coats the pasta.
  7. Divide the sausage and pepper cavatappi between two shallow bowls and serve immediately.
