Chef critique
Calabrian Sausage-Pepper Cavatappi
A flavorful and well-formulated pasta recipe with a hearty sauce-to-pasta ratio. However, it suffers from several mechanical issues including severely under-salted pasta water, missing pasta water to bind the sauce, and flawed multitasking instructions that will cause the pasta to finish before the sauce.
Score: 7/10
Suggested fixes
- Remove the pasta water salt from the overall ingredient total. Change the ingredient list to say 'Kosher salt, plus more for the pasta water'. Ask the cook to heavily salt the 3 quarts of boiling water (approx. 1 tablespoon).
- Change the multitasking instruction to: 'While the water is coming to a boil, begin preparing the sauce.'
- Add an instruction to 'reserve 1/4 cup of the starchy pasta water' before draining the cavatappi, and add a splash of it along with the Parmesan in Step 6 to create a smooth, clinging sauce.
- Remove the instruction to crumble the sausage in Step 1. Instead, let the cook crumble the sausage using a wooden spoon directly in the hot skillet in Step 3.
Issues
- high / flavor: Adding only 3/4 teaspoon of kosher salt to 3 quarts of pasta boiling water will leave the pasta bland. Standard practice dictates 1 to 2 tablespoons of kosher salt for a pot this size.
- medium / timing: Step 2 tells the reader to 'prepare the sauce while it [the pasta] cooks'. The sauce takes about 17 minutes to cook, while the pasta only takes 9-11 minutes. Starting the sauce this late means the pasta will finish early, sit in the strainer, and dry out.
- medium / cookability: Step 6 adds 1 ounce of grated Parmesan directly to the drained pasta and skillet, which is likely to clump. Reserving and adding a splash of starchy pasta water is essential to emulsify the cheese into the tomato sauce.
- low / safety: Step 1 instructs the cook to prep vegetables, grate cheese, and 'crumble' raw pork sausage all in the same step. Doing this on the same board/area before cooking can lead to cross-contamination. It's safer and easier to break the raw sausage apart directly in the pan.
Strengths
- All ingredient quantities are explicitly and correctly stated in each instruction step.
- The recipe follows an excellent prep-first structure.
- Estimates for calories, macros, and cost appear accurate and reasonable.
