Simple Turkey-Stuffed Bell Peppers
An easy stuffed pepper dinner using ground turkey, onion, tomatoes, and a little rice. Bell peppers are available in your list, and this is a very simple oven meal for two.

- Garlic 1 clove $1.50
- Pantry: cooked rice 1 cup
- Pantry: olive oil 1 tbsp
- Pantry: salt 1 tsp
- Pantry: black pepper 1/2 tsp
- Pantry: paprika or Italian seasoning 1 tsp
Instructions
- Preheat oven to 400°F.
- Halve the bell peppers lengthwise and remove seeds. Place in a baking dish.
- Heat olive oil in a skillet. Cook chopped onion for 3 minutes, then add garlic.
- Add ground turkey, salt, pepper, and paprika or Italian seasoning. Cook until mostly browned.
- Stir in chopped grape tomatoes and cooked rice. Cook 2 minutes.
- Fill pepper halves with the turkey mixture.
- Cover loosely with foil and bake 20 minutes. Uncover and bake 5 more minutes until peppers are tender.
- Serve 2 stuffed pepper halves per person.
