A highly flavorful and well-choreographed recipe with an authentic South Indian-inspired flavor profile. The concurrent timing instructions for the rice and the braise are exceptional. Minor adjustments to fat management and clarifying the divided use of the jalapeño will make this recipe virtually foolproof.
