- Remove the black mustard seeds from the spice blend in step 4. In step 6, add the mustard seeds to the hot oil first, wait 15-30 seconds until they pop, then add the onions and zucchini.
- Move the 4 3/4 teaspoons of salt for the vegetables from step 6 to step 7, adding it alongside the tomatoes and coconut milk so the zucchini can brown properly in the oil.
Issues
- medium / flavor: Whole black mustard seeds must be tempered in hot oil so they pop, releasing their flavor and losing their raw bitterness. Mixing them with ground spices and adding them to wet vegetables prevents them from popping.
- low / cookability: Adding 4 3/4 teaspoons of salt to the zucchini and onions at the start of cooking will immediately draw out a large amount of water, making it nearly impossible for the zucchini to brown in 5 minutes as instructed.
