Gochujang Chicken & Zucchini Bowls
A structurally sound and appealing stir-fry recipe with accurate timing and good flavor pairings. However, the chicken is significantly underseasoned during its initial cooking phase, the instructions feature robotic phrasing when referring back to prepared ingredients, and taking the temperature of small diced chicken pieces is impractical.
Score: 7/10
Suggested fixes
- Increase the kosher salt for the chicken to at least 1/2 to 3/4 teaspoon to properly season the meat. If total sodium is a concern, reduce the soy sauce to 1 tablespoon rather than sacrificing the presalting of the meat.
- Simplify the language in later steps to just say 'the prepared chicken' and 'the prepared sauce'.
- Change the chicken doneness cue to 'until browned and cooked through'.
Issues
- high / flavor: 1.25 pounds of bone-in thighs yields roughly 12 ounces (340g) of boneless, skinless meat. Following the 1.25% rule by weight, the chicken requires about 4.25 grams of salt (roughly 3/4 teaspoon kosher salt). The 1/4 teaspoon used leaves the meat substantially underseasoned. While the sauce is salty, it does not correct the lack of seasoning inside the chicken pieces.
- medium / clarity: Repeating 'from 1.25 pounds bone-in chicken thighs' in steps 4 and 6, and referencing '7 1/2 tablespoons sauce', is very robotic and awkward to read.
- low / cookability: Asking the cook to temp 1-inch pieces of chicken with a thermometer to ensure they reach 165°F is tedious and impractical in a fast-paced stir-fry.
Strengths
- Precise and accurate accounting of all ingredients across multiple steps (e.g., water and oil division).
- Logical sequencing, starting with prep and allowing rice to cook while stir-frying.
- Good balance of sweet, spicy, and savory flavors in the sauce.
