Chicken Yassa with Charred Summer Corn
A flavorful and appealing Senegalese-inspired chicken dish. The ingredient usage and cook times are accurate, and safely cooking the reserved marinade into the sauce is a great technique. However, pan-charring whole ears of corn in a skillet is awkward and cooks unevenly; cutting the kernels off first would greatly improve the dish. Additionally, prep work should happen before cooking begins, and the chicken could use a bit more salt.

Suggested fixes
- Instruct the cook to shuck the corn and cut the kernels off the cob during the prep phase, then pan-char the loose kernels in Step 2. This will cook much more evenly and be easier to eat.
- Create a dedicated prep step at the beginning to slice the onion, mince the garlic, and prep the corn before any heat is turned on.
- Increase the kosher salt on the chicken to 3/4 or 1 teaspoon (and adjust the total kosher salt in the ingredient list accordingly) for a better baseline seasoning.
