Persian Lemon Chicken & Eggplant
A flavorful and well-conceptualized sheet-pan dinner with excellent pacing. However, the recipe severely underestimates the amount of olive oil needed to roast eggplant, and the salt quantity is too low for the volume of food. A minor adjustment to the marinating instructions will also improve food safety clarity.

Suggested fixes
- Increase the olive oil to 3 or 4 tablespoons to ensure the eggplant roasts properly and the marinade has enough volume to coat all the ingredients.
- Increase the kosher salt in the marinade to 1 1/2 teaspoons to adequately season the chicken and vegetables.
- Instruct the cook to divide the marinade into two bowls, or pour half over the chicken on the sheet pan, and use the remaining untouched marinade to toss the vegetables.
- Add 'zest and juice the lemon' to the prep list in step 1.
