Instructions

  1. Pat 12 ounces boneless skinless chicken thighs dry and season all over with 3 grams fine sea salt. Let stand while making the marinade.

  2. Make the marinade by combining:

    • 2 teaspoons light brown sugar
    • 1 tablespoon neutral cooking oil
    • 2 finely grated garlic cloves
    • 1 tablespoon finely grated fresh ginger
    • 1 tablespoon lime juice
    • 1/2 teaspoon black pepper

    Add the salted chicken, turn to coat, and marinate at room temperature for 15 minutes.

  3. While the chicken marinates, rinse 3/4 cup jasmine rice until the water is nearly clear. Combine the rice in a small saucepan with 1 cup water and 1.5 grams fine sea salt. Instructions

  1. Heat the oven to 425°F with a rack in the upper third. Line a rimmed sheet pan with parchment paper.

  2. Husk 2 ears Bi-color Corn and cut the kernels from the cobs. Halve 6 ounces Organic Sungold Cherry Tomatoes.

  3. Toss the prepared corn and tomatoes on the sheet pan with 2 teaspoons extra-virgin olive oil, 3.5 grams fine sea salt, and 1/4 teaspoon freshly ground black pepper. Spread them around the edges of the pan and roast for 12 minutes.

  4. While the vegetables roast, pat 12 ounces Coho Salmon Fillet dry and divide it into 2 portions. Rub with 1 teaspoon extra-virgin olive oil and season evenly with 4 grams fine sea salt and 1/4 teaspoon freshly ground black pepper.

  5. Make the brown-butter glaze: melt 2 tablespoons unsalted butter in a small saucepan over medium heat and cook for about 3 minutes, swirling frequently, until golden and nutty-smelling. Remove from the heat and whisk in:

Instructions

  1. Cut 1 pound Organic Eggplant into 3/4-inch cubes. Thinly slice 2 Green Onions, separating the white and green portions. Mince 3 garlic cloves and 1 tablespoon fresh ginger. Toast 1 teaspoon Sichuan peppercorns in a large dry skillet over medium heat for 1 minute, then finely crush them.

  2. Season 8 ounces Ground Pork evenly with 1/4 teaspoon (1.5 grams) fine sea salt and let it stand for 10 minutes while starting the rice.

  3. Combine 3/4 cup dry Organic Jasmine Thai White Rice, 1 1/4 cups water, and 1/4 teaspoon (1.5 grams) fine sea salt in a small saucepan. Bring to a boil, cover, reduce the heat to low, and simmer for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

  4. Make the stir-fry sauce by whisking together:

    • 1 1/2 tablespoons low-sodium soy sauce
