- Rockfish fillet 1 lb $4.99/lb (sale)

- Organic Garlic 2 cloves, minced $6.99/lb
- Organic Italian Parsley 2 Tbsp, chopped $1.99 each
- Lemon 1 (zest + wedges) pantry
- Smoked paprika 1 tsp pantry
- Olive oil 3 Tbsp pantry
- Salt & black pepper to taste pantry
Instructions
- Heat oven to 425°F. Line a sheet pan with parchment.
- Toss potatoes (1-inch chunks) with 2 Tbsp olive oil, half the garlic, 1/2 tsp salt, pepper. Roast 15 minutes.
- Add green beans to the pan, toss with potatoes. Roast 8 minutes more.
- Pat rockfish dry. In a small bowl mix remaining 1 Tbsp oil, remaining garlic, 1 tsp paprika, lemon zest, 1/2 tsp salt, pepper. Brush over fish.
- Scoot veggies to make space; place fish on the pan. Roast 8–10 minutes until fish flakes easily (135–140°F internal).
- Squeeze lemon over everything. Scatter parsley. Serve with lemon wedges.
