Ingredients

  • Boneless skinless chicken thighs
    1.5 pounds $12.99
  • Produce-box cucumber
1 medium cucumber, about 12 ounces
  • Organic yellow onion
    4 ounces, about 1/2 medium onion $4.99
  • Peeled garlic
    2 cloves $5.99
  • Lemon
    1, yielding 2 tablespoons juice $0.99
  • Unsalted butter
    2 tablespoons
  • Olive oil
    1 tablespoon
  • Dry white wine
    1/3 cup
  • Dijon mustard
    2 tablespoons
  • Heavy cream
    1/2 cup
  • Dried tarragon
    1 teaspoon
  • Morton kosher salt flakes
    2 1/4 teaspoons
  • Black pepper
    1/2 teaspoon

Instructions

  1. Pat 1.5 pounds chicken thighs dry. Season all over with 1 3/4 teaspoons Morton kosher salt flakes and 1/4 teaspoon black pepper. Let stand while preparing the vegetables.

  2. Finely dice 4 ounces yellow onion and mince 2 garlic cloves. Juice 1 lemon, measuring 2 tablespoons juice for the recipe.

  3. Thinly slice 1 medium cucumber, about 12 ounces. Toss with 1/2 teaspoon Morton kosher salt flakes in a colander and let drain for 10 minutes while you begin cooking the chicken.

  4. Heat 1 tablespoon unsalted butter in a large skillet over medium heat. Sear the seasoned chicken in two batches, about 3 minutes per side, until golden; transfer to a plate. The chicken will finish cooking in the sauce.

  5. Add the remaining 1 tablespoon unsalted butter and the diced onion to the skillet. Cook over medium-low heat for 5 minutes, stirring, until softened. Add the minced garlic and cook for 30 seconds.

  6. Pour in 1/3 cup dry white wine and scrape up the browned bits. Simmer for 2–3 minutes, until reduced by about half. Stir in the sauce ingredients:

    • 2 tablespoons Dijon mustard
    • 1/2 cup heavy cream
    • 1/2 teaspoon dried tarragon

Add 1/4 cup water and bring to a gentle simmer.

  7. Return the chicken and its collected juices to the skillet. Partially cover and simmer gently for 10–15 minutes, turning once, until the thickest thigh reaches 175°F. Transfer the chicken to a clean plate to rest for 3 minutes while you finish the sauce.

  8. While the chicken simmers, pat the drained cucumber dry. Toss with the salad dressing:

    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 1/2 teaspoon dried tarragon
    • 1/4 teaspoon black pepper

Set the cucumber salad aside until serving.

  9. Simmer the cream sauce uncovered for 2–3 minutes, until it lightly coats a spoon. Turn off the heat and stir in the remaining 1 tablespoon lemon juice.

  10. Divide the chicken between two warm plates and spoon the Dijon cream sauce over it. Serve the cucumber salad alongside in small bowls to keep its dressing separate from the warm sauce.

  • Peeled garlic
    2 cloves $5.99
  • Lime

    1/2 teaspoon
  • Morton kosher salt flakes
    2 1/4 teaspoons

Instructions

  1. Heat the oven to 425°F. Line a large rimmed sheet pan with parchment paper. Scrub 1 lb delicata squash, trim the ends, halve lengthwise and scoop out the seeds. Cut into 1/2-inch-thick half-moons; leave the tender skin on.

  2. Pat 1 lb boneless skinless chicken thighs dry. Season all over with 1 1/4 teaspoons Morton kosher salt flakes and let stand while you prepare the seasoning.

  3. Finely mince 2 cloves peeled garlic. Halve 1 lime, reserving one half for the seasoning and cutting the other half into serving wedges. Stir together the smoky seasoning:

    • 2 tablespoons olive oil
    • 2 cloves garlic, minced
    • Juice of 1/2 lime
    • 2 teaspoons salt-free chili powder
    • 1 teaspoon ground cumin
    • 1/2 teaspoon dried oregano

    Mix until evenly combined.

  4. Toss the sliced squash with half the smoky seasoning and 1 teaspoon Morton kosher salt flakes. Spread over one side of the sheet pan in a single layer.

  5. Rub the seasoned chicken with the other half of the smoky seasoning. Arrange on the other side of the sheet pan, unfolded and with space between the pieces.

  6. Roast for 25–30 minutes, turning the squash halfway through, until its edges are browned and the chicken reaches 175°F in the thickest part. Transfer the chicken to a plate and rest for 5 minutes; if needed, leave the squash in the oven during the rest to finish becoming tender.

  7. Divide the roasted squash and chicken between two plates. Spoon any pan juices over the chicken and serve with the reserved lime wedges.

Ingredients

  • Carlton Farms Mild Italian Sausage
    8 oz $5.99
  • Organic broccoli
    1 head, about 12 oz $4.99
  • Medium bulgur
    3/4 cup dry

  • Olive oil
    1 tablespoon
  • Ground cumin

    1/4 teaspoon
  • Dried mint
    1/2 teaspoon
  • Morton kosher salt flakes
    3/4 teaspoon, divided
  • Ground black pepper
    1/4 teaspoon

Instructions

  1. Heat the oven to 425°F. Cut 1 head broccoli (about 12 oz) into bite-size florets; peel the tough outer layer from the stalk and slice the tender center.

  2. On a large sheet pan, toss together:

    • The prepared broccoli
    • 1 tablespoon olive oil
    • 1/2 teaspoon Morton kosher salt flakes
    • 1/4 teaspoon ground black pepper

Spread in a single layer. Roast for 20–25 minutes, turning once, until browned at the edges and tender.

  3. While the broccoli roasts, bring 1 1/2 cups water and 1/4 teaspoon Morton kosher salt flakes to a boil in a small saucepan. Stir in 3/4 cup dry medium bulgur, cover, and simmer gently for 12–15 minutes, until tender and the water is absorbed. Remove from the heat and let stand, covered, for 5 minutes, then fluff.

  4. Make the lemon-tahini sauce. Finely grate 1 lemon to obtain 1 teaspoon zest, then squeeze it to obtain 2 tablespoons juice. Finely grate 1 peeled garlic clove. Whisk together:

    • 2 tablespoons tahini
    • 1 teaspoon lemon zest
    • 2 tablespoons lemon juice
    • The grated garlic
    • 1/2 teaspoon dried mint

Whisk in 2–3 tablespoons water, a little at a time, until pourable.

  5. Place 8 oz mild Italian sausage in a skillet over medium heat. Break it into bite-size pieces and cook for 7–9 minutes, stirring occasionally, until browned and the largest pieces reach 160°F. Add 1 teaspoon ground cumin and 1/4 teaspoon ground allspice during the final minute. Leave the sausage unsalted because it is already seasoned.

  6. Divide the bulgur between two bowls. Arrange the roasted broccoli and spiced sausage alongside it, then drizzle with the lemon-tahini sauce and serve.

Ingredients

  • Nicky Farms 80% Lean Ground Beef
    1 lb $8.99
  • Produce Box — Organic Lacinato Kale
    8 oz
  • White jasmine rice
    1/2 cup dry
  • Peeled garlic
    2 cloves $5.99
  • Green onions
    2 medium (about 1 oz) $3.99
  • Fresh ginger
    1 tablespoon finely grated
  • Soy sauce
    1 tablespoon
  • Rice vinegar
    1 tablespoon
  • Brown sugar
    2 teaspoons
  • Toasted sesame oil
    1 teaspoon
  • Red pepper flakes
    1/4 teaspoon, optional
  • Morton kosher salt flakes
    1 1/4 teaspoons, divided
  • Sesame seeds
    1 teaspoon

Instructions

  1. Season 1 lb ground beef with 1 teaspoon Morton kosher salt flakes, gently distributing the salt without kneading the meat. Let it stand while you prepare the vegetables and rice; the soy sauce will supply additional seasoning later.

  2. Strip the tough stems from 8 oz lacinato kale and thinly slice the leaves. Mince 2 cloves garlic. Thinly slice 2 medium green onions, keeping the whites and greens separate.

  3. Rinse 1/2 cup dry jasmine rice and drain. Put it in a small saucepan with 3/4 cup water and 1/4 teaspoon Morton kosher salt flakes. Bring to a boil, cover and reduce the heat to low. Cook for 15 minutes, then remove from the heat and let stand, covered, for 5 minutes. Prepare the stir-fry while the rice cooks.

  4. Stir together the sauce in a small bowl:

    • 1 tablespoon finely grated fresh ginger
    • 1 tablespoon soy sauce
    • 1 tablespoon rice vinegar
    • 2 teaspoons brown sugar
    • 1 teaspoon toasted sesame oil
    • 1/4 teaspoon red pepper flakes, if using

Mix until the sugar mostly dissolves.

  5. Heat a large skillet over medium-high heat. Add the seasoned beef, pressing it into a thin layer. Cook undisturbed for 3 minutes to brown, then break it into bite-size pieces and cook for another 3–4 minutes. Spoon off excess rendered fat, leaving about 2 teaspoons in the skillet.

  6. Add the prepared garlic and green onion whites to the beef and stir for 30 seconds. Add the sliced kale and 2 tablespoons water. Cover for 2 minutes, then uncover and stir-fry for 2–3 minutes, until the kale is tender and the water has evaporated.

  7. Pour in the ginger-sesame sauce and toss for 1–2 minutes, until it lightly coats the beef and kale and the beef reaches 160°F.

  8. Fluff the rice and divide between two bowls. Spoon the beef and kale over it, then finish with the prepared green onion greens and 1 teaspoon sesame seeds.
