Instructions

  2. Heat 2 tbsp extra-virgin olive oil in a medium pot over medium heat. Add 4 oz diced yellow onion and cook for 4 minutes, stirring occasionally; add 2 minced garlic cloves and cook for 1 minute.
  3. Stir in 2 tbsp tomato paste, 1 tsp dried Italian seasoning, and 1/4 tsp crushed red pepper flakes; cook for 1 minute to caramelize the tomato paste lightly.
  4. Add 6 oz rinsed red lentils, 1 lb chopped Roma tomatoes, 3 cups low-sodium vegetable broth, 1/2 tsp kosher salt, and 1/2 tsp ground black pepper. Bring to a boil, reduce to a gentle simmer, and cook uncovered for 15 minutes, stirring twice.
  5. Fold in 12 oz diced zucchini and simmer for 8 minutes, until the zucchini is just tender and the red lentils are creamy; add a splash of water only if the stew becomes thicker than desired.
