Lemon-Garlic Spaghetti Squash

- Spaghetti Squash 1 medium, about 3 lb $1.49/lb
- Garlic 1 clove $1.50 each
- Lemon 1/2 lemon $4.99/2 lb bag
- Oil, salt, pepper to taste pantry
Instructions
- Heat oven to 425°F.
- Halve 1 medium spaghetti squash lengthwise and scoop out seeds.
- Rub cut sides with oil, salt, and pepper; place cut-side down on a sheet pan.
- Roast 35 to 40 minutes until tender.
- Scrape into strands and toss with 1 minced garlic clove and 1 teaspoon lemon juice while warm.
- Cool and portion.
