Lemon-Pan Salmon with Roasted Asparagus & Potatoes

A bright Pacific Northwest-appropriate spring dinner: lemony seared salmon with roasted asparagus and buttery yellow potatoes. It leans hard into March produce in Washington while keeping the ingredient list streamlined and weeknight-friendly.

Ingredients

  • Atlantic Salmon Portion 1 portion, about 8-10 oz $6.99
  • Green Asparagus 1 bunch $4.99
  • Yellow Potato 1 lb $1.49
  • Lemon 1 $0.99
  • Organic Garlic, 3 CT 2 cloves $2.89
  • Italian Parsley Bunch 2 tbsp chopped $1.29
  • Yellow Onion 1/2 medium $1.49

Instructions

  1. Prep 1 pound Yellow Potato ($1.49) by cutting into 1-inch chunks, trim 1 bunch Green Asparagus ($4.99), thinly slice 1/2 medium Yellow Onion ($1.49), mince 2 cloves Organic Garlic ($2.89), chop 2 tablespoons Italian Parsley ($1.29), and zest then halve 1 Lemon ($0.99). Pat 1 Atlantic Salmon Portion ($6.99) dry and season with salt, pepper, and half the lemon zest.
  2. Heat the oven to 425°F. Toss the 1 pound Yellow Potato ($1.49) with 1 tablespoon olive oil, the sliced 1/2 medium Yellow Onion ($1.49), half the minced 2 cloves Organic Garlic ($2.89), salt, and pepper on a sheet pan. Roast until almost tender, about 15 minutes.
  3. Add the trimmed 1 bunch Green Asparagus ($4.99) to the sheet pan with 1 teaspoon olive oil, salt, and pepper. Push the vegetables to one side and return the pan to the oven for 8 to 10 minutes, until the asparagus is crisp-tender and the potatoes are browned.
  4. While the vegetables roast, heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear the 1 Atlantic Salmon Portion ($6.99) for 3 to 4 minutes on the first side, then flip and cook 2 to 3 minutes more, until just cooked through.
  5. Make a quick pan finish by lowering the heat and adding the remaining minced 2 cloves Organic Garlic ($2.89), 1 tablespoon lemon juice from the 1 Lemon ($0.99), 1 tablespoon water, and the chopped 2 tablespoons Italian Parsley ($1.29) to the salmon pan. Spoon the lemony juices over the 1 Atlantic Salmon Portion ($6.99).
  6. Serve the seared 1 Atlantic Salmon Portion ($6.99) with the roasted 1 pound Yellow Potato ($1.49) and 1 bunch Green Asparagus ($4.99). Finish everything with the remaining lemon juice and a little extra chopped parsley if you like.

Cook time: 35 minutes

Estimated cost: $12-16

Health notes: About 650-750 calories per serving. High in protein and omega-3 fats from salmon, plus fiber, potassium, and folate from asparagus and potatoes. Keep the oil moderate and go heavy on lemon for a lighter finish.

Drink pairing: A crisp Sauvignon Blanc is the best all-around match for the lemon and asparagus. If you prefer something slightly rounder, look for an unoaked Chardonnay.
