Lebanese Lemon Chicken with Grilled Zucchini

Instructions

  1. Preheat a grill to medium-high, about 425°F. Mince 2 garlic cloves, chop 1/4 cup parsley, and zest and juice 1 medium lemon. Cut 1 pound zucchini lengthwise into thick planks and slice 1/2 pound Walla Walla sweet onion into thick rounds.
  2. Whisk the minced 2 garlic cloves, zest and juice of 1 medium lemon, 1 tablespoon olive oil, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon smoked paprika, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Coat 1 pound chicken thighs with the marinade and let stand for 15 minutes while the grill heats.
  3. Brush 1 pound zucchini planks and 1/2 pound onion rounds with 1 tablespoon olive oil, then season them with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper.
  4. Grill the prepared 1 pound chicken thighs for 5 to 7 minutes per side, closing the lid between turns, until lightly charred and the thickest pieces reach 165°F. Grill the prepared 1 pound zucchini and 1/2 pound onion alongside the chicken for 3 to 5 minutes per side until tender and marked.
  5. Transfer the grilled 1 pound chicken thighs, 1 pound zucchini, and 1/2 pound onion to a platter and rest for 5 minutes.
  6. Divide the grilled 1 pound chicken thighs, 1 pound zucchini, and 1/2 pound onion between two plates, spoon over any resting juices, and finish with 1/4 cup chopped parsley.
