1.
Preheat the grill to medium-high, about 450°F, for 10 minutes. Pat 1 lb Certified Angus Beef Tri Tip Steak dry and shuck 2 ears Fresh Sweet Corn on the Cob.
-
2.
Coat 1 lb tri-tip with 1 tablespoon olive oil, then rub it with 1 teaspoon kosher salt, 1/2 teaspoon black pepper, 1 teaspoon finely ground coffee, 1 teaspoon light brown sugar, 1 teaspoon smoked paprika, and 1/2 teaspoon garlic powder.
-
3.
Brush 2 ears corn with 1/2 tablespoon olive oil and season them with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
-
4.
Grill 1 lb seasoned tri-tip for 5 to 7 minutes per side, closing the lid between turns, until the center reaches 130–135°F for medium-rare. During the final 10 minutes, grill 2 seasoned ears corn, turning every 2 to 3 minutes until lightly charred.
-
5.
Transfer 1 lb grilled tri-tip to a board and rest it for 10 minutes. Rub 1 tablespoon unsalted butter over 2 grilled ears corn while they are hot.
-
6.
Thinly slice 1 lb rested tri-tip against the grain and divide it between two plates. Slice 2 green onions, scatter them over the beef and 2 buttered ears corn, and serve.
