- Olive oil 2 tablespoons pantry
- Salt to taste pantry
- Black pepper to taste pantry
Instructions
- Heat oven to 425°F.
- Cut beets into wedges and halve Brussels sprouts.
- Toss vegetables with olive oil, salt, and pepper on a sheet pan.
- Roast 25 to 30 minutes, stirring once, until tender and browned.
- Season ribeye with salt and pepper.
- Sear in a hot skillet 3 to 4 minutes per side, then rest 5 minutes.
- Serve steaks with roasted vegetables.
