Instructions

- While the 12 oz chicken marinates, cut 12 oz tomatoes into wedges and thinly slice 2 green onions. Toss the 12 oz tomatoes and 2 green onions with 1/4 cup chopped cilantro, 1 tbsp olive oil, 2 tbsp lemon juice, and 1/4 tsp kosher salt.
- Grill the marinated 12 oz chicken for 5 to 6 minutes per side, closing the lid between turns, until lightly charred and the thickest part reaches 165°F.
- Rest the grilled 12 oz chicken for 5 minutes, then slice it across the grain; allow the mixture containing 12 oz tomatoes to stand during the rest so its juices form a light dressing.
