Instructions

  1. Dice 12 ounces Organic Eggplant into 1/2-inch cubes, chop 8 ounces Organic Heirloom Tomatoes, mince 2 garlic cloves, and pat 2 Boneless Pork Loin Chops dry.
  2. Bring 3 quarts water and 1 tablespoon kosher salt to a boil. Add 4 ounces spaghetti and cook until al dente, about 9 minutes; drain.
  3. Season 2 Boneless Pork Loin Chops with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
