Ginger-Lime Shrimp Stir-Fry with Bok Choy & Mushrooms

Fast, lively, and different from your recent meals: shrimp and bok choy stir-fry with mushrooms and rice-style vegetable bulk from cabbage. It has the speed of takeout but tastes fresher, greener, and more seasonal for March in Washington.

Instructions

  1. Prep 1 package Easy Peel Black Tiger Shrimp 21-25 Count, 12 OZ ($8.88) by thawing if needed, peeling, and patting dry. Halve or quarter 1 bunch Organic Baby Bok Choy ($2.99), thinly shred 1/4 small Organic Green Cabbage ($1.10), slice 1 package Baby Bella Mushrooms 8 OZ ($2.99), slice 3 stalks Green Onion ($1.39), mince 2 cloves Organic Garlic ($2.89), and cut 1 Lime ($0.59) into wedges.
  2. In a small bowl, mix 1 tablespoon Organic Ginger Puree ($3.99), the minced 2 cloves Organic Garlic ($2.89), 1 tablespoon soy sauce if you have it in the pantry, 1 teaspoon lime juice from the 1 Lime ($0.59), and 2 tablespoons water.
  3. Heat 1 tablespoon neutral oil in a large skillet or wok over high heat. Add the prepared 1 package shrimp ($8.88), season lightly with salt, and stir-fry for 2 to 3 minutes until almost cooked through. Remove to a plate.
  4. Add another teaspoon oil if needed, then stir-fry the sliced 1 package Baby Bella Mushrooms ($2.99) for 3 minutes until browned. Add the shredded 1/4 small Organic Green Cabbage ($1.10) and cook 2 minutes more.
  5. Add the halved 1 bunch Organic Baby Bok Choy ($2.99) and most of the sliced 3 stalks Green Onion ($1.39). Pour in the ginger-garlic sauce and cook 2 to 3 minutes, tossing, until the bok choy is crisp-tender.
  6. Return the cooked 1 package shrimp ($8.88) to the skillet and toss for 1 minute until fully cooked and glazed. Squeeze over more juice from the 1 Lime ($0.59).
  7. Serve the shrimp stir-fry hot, topped with the remaining sliced 3 stalks Green Onion ($1.39) and extra lime wedges from the 1 Lime ($0.59). If you want a starch, spoon it over pantry rice or noodles.

Cook time: 30 minutes

Estimated cost: $11-15

Health notes: About 450-550 calories per serving before rice or noodles, with lean protein from shrimp and lots of volume from bok choy, cabbage, and mushrooms. A great lower-carb option if served as is; add rice if you want a heartier meal.

Drink pairing: Dry Riesling is excellent here, especially with the ginger, lime, and slight heat. If you want something fuller but still refreshing, try Sauvignon Blanc.
