Instructions
- Pat shrimp dry. Mince garlic and grate ginger.
- Chop bok choy, separating stems and leaves.
- Heat 1 tablespoon oil in a skillet over medium-high heat. Cook shrimp 2 to 3 minutes until just pink; remove.
- Add remaining oil and stir-fry bok choy stems 2 minutes.
- Add garlic, ginger, and bok choy leaves; cook 1 minute.
- Return shrimp to pan, add fish sauce, and toss 1 minute.
- Serve immediately.
