Instructions
- Peel the shrimp and pat dry.
- Slice mushrooms and green onions; halve bok choy.
- Heat oil in a skillet over medium-high heat.
- Cook shrimp 1 to 2 minutes per side, then remove.
- Cook mushrooms until browned, then add bok choy and a splash of water.
- Add garlic and green onions; cook 30 seconds.
- Return shrimp to pan and finish with lime juice.
- Serve hot.
