Instructions
- Rinse the rice; cut the pork into 1-inch pieces, trim and halve the green beans, thinly slice the onion, and mince the garlic.
- Combine the rice, 1 1/2 cups water, and a pinch of salt in a small saucepan. Bring to a boil, cover, reduce the heat to low, and cook for 15 minutes; remove from the heat and let stand, covered, for 5 minutes.
- Meanwhile, heat the oil in a wide skillet or sauté pan over medium-high heat. Pat the pork dry and brown it for 4 to 5 minutes, turning occasionally; transfer it to a plate.
- Reduce the heat to medium and sauté the onion for 3 minutes. Add the garlic and cook for 30 seconds, then stir in the soy sauce, vinegar, 3/4 cup water, brown sugar, bay leaf, and black pepper.
- Return the pork and its juices to the pan. Bring to a gentle simmer, cover, and braise for 10 minutes; add the green beans, cover again, and cook for 6 to 8 minutes, until the beans are crisp-tender and the pork reaches at least 145°F.
- Uncover and simmer for 2 to 3 minutes if the sauce needs thickening. Discard the bay leaf, taste, and adjust with salt or a splash of vinegar.
- Fluff the rice and divide it between two shallow bowls; spoon the pork, green beans, onions, and glossy adobo sauce over the top.
