Basque Chicken with Summer Pipérade

Instructions

  1. Rinse 1/2 cup dry white rice. Combine the 1/2 cup dry white rice with 1 cup water and 1/4 teaspoon kosher salt in a small saucepan; bring to a boil, cover, reduce the heat to low, and cook for 18 minutes. Remove from the heat and let stand, covered, for 5 minutes.
  2. Pat 1.25 pounds chicken thighs dry and season with 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat; sear the 1.25 pounds chicken thighs for 4–5 minutes per side, then transfer them to a plate.
  3. Thinly slice 4 ounces sweet onion and 1 red bell pepper (about 6 ounces), and mince 2 garlic cloves. Add 1/2 tablespoon olive oil, the 4 ounces sliced sweet onion, and the 1 sliced red bell pepper to the skillet; cook for 4 minutes. Stir in the 2 minced garlic cloves, 1 teaspoon smoked paprika, and 1/4 teaspoon crushed red pepper flakes for 30 seconds.
  4. Slice 12 ounces zucchini into half-moons and chop 8 ounces Roma tomatoes. Add the 12 ounces sliced zucchini and 8 ounces chopped Roma tomatoes to the skillet; cook for 3 minutes, stirring occasionally.
  5. Pour in 1/2 cup low-sodium chicken broth and 1 tablespoon sherry vinegar. Return the 1.25 pounds seared chicken thighs and any collected juices to the skillet; cover and simmer over medium-low heat for 15–18 minutes, until the thickest part of the chicken reaches 165°F.
  6. Fluff everything in the rice saucepan, spoon it into two shallow bowls, top with everything in the chicken skillet, and finish the plated portions with 2 tablespoons chopped flat-leaf parsley.
