Instructions
- Pat chops dry and season generously with salt and pepper.
- Preheat grill to medium-high and oil grates (use animal fat if you avoid plant oils).
- Grill chops 3–5 minutes per side (depending on thickness) until 145°F internal.
- Move to a cooler part of the grill (or off heat) and add butter on top; let melt over the meat 1 minute.
- Rest 5 minutes, then serve (1 chop per person).
