Ginger-Lime Shrimp Lettuce Cups with Snap Peas and Rice Noodles

Instructions
- Cook the rice noodles according to package directions, then rinse under cool water and drain well. Cut into shorter lengths with kitchen scissors if desired.
- In a small bowl, whisk together lime juice, soy sauce, honey or sugar, sesame oil, grated ginger, minced garlic, and black pepper.
- Pat the shrimp dry. Heat neutral oil in a large skillet over medium-high heat. Add the shrimp and cook 1–2 minutes per side, until pink and just cooked through.
- Pour half the ginger-lime sauce over the shrimp and toss for 30 seconds. Remove from heat.
- In a bowl, toss the cooked noodles with the remaining sauce, snap peas, cucumber, radishes, mint, and cilantro.
- Arrange lettuce leaves on plates. Fill each leaf with the noodle-vegetable mixture and top with warm shrimp.
- Serve immediately with extra lime wedges if you have them.
