Healthy Chana Saag
A healthy Indian-inspired chickpea and spinach curry with tomato, onion, and lemon. High in fiber and protein, with a bright, fresh finish.

- Sweet Onion 1 medium, diced $1.43

- Chickpeas 2 cans, drained and rinsed pantry
- Olive oil 1 tbsp pantry
- Ground cumin 1 1/2 tsp pantry
- Ground coriander 1 tsp pantry
- Turmeric 1/2 tsp pantry
- Garam masala 1 tsp pantry
- Salt to taste pantry
Instructions
- Heat 1 tablespoon olive oil in a skillet or pot over medium heat.
- Add 1 diced Sweet Onion and cook for 5 to 6 minutes until soft.
- Add 3 minced cloves Organic Garlic and 1 tablespoon ginger puree; cook 1 minute.
- Stir in 1 1/2 teaspoons cumin, 1 teaspoon coriander, 1/2 teaspoon turmeric, and 1 teaspoon garam masala.
- Add 2 chopped tomatoes and a pinch of salt. Cook 6 to 8 minutes until saucy.
- Add 2 cans chickpeas and 1/2 to 3/4 cup water. Simmer 8 minutes, lightly mashing some chickpeas to thicken.
- Stir in the spinach and cook 1 to 2 minutes until wilted.
- Finish with lemon juice and chopped cilantro.
- Serve as is for a lighter meal, or with a small portion of rice if desired.
