Filipino Pork Giniling Bowls

Instructions

  1. Rinse the rice, then cook it according to package directions; while it cooks, chop the Roma tomatoes, dice the potatoes, carrot, bell pepper, and onion small, mince the garlic, and slice the green onion.
  2. Heat the oil in a large skillet over medium-high heat, add the diced potatoes and carrot with a pinch of salt, and sauté for 6–8 minutes until lightly browned and starting to soften.
  3. Add the onion and bell pepper and cook for 3 minutes, then stir in the garlic for 30 seconds until fragrant.
  4. Add the ground pork, breaking it up with a spoon, and sauté for 5–6 minutes until no pink remains and the pork reaches 160°F.
  5. Stir in the chopped Roma tomatoes, soy sauce, vinegar, brown sugar, black pepper, and 1/4 cup water; simmer 8–10 minutes until the tomatoes collapse into a saucy glaze and the potatoes are tender.
  6. Taste and adjust with a little more salt, vinegar, or sugar as needed, then fold in half the sliced green onion.
  7. Spoon the rice into two shallow bowls, top with the pork giniling sauté, and finish with the remaining green onion and extra black pepper.
