Instructions
- Rinse the rice, then cook it according to package directions; while it cooks, chop the Roma tomatoes, dice the potatoes, carrot, bell pepper, and onion small, mince the garlic, and slice the green onion.
- Heat the oil in a large skillet over medium-high heat, add the diced potatoes and carrot with a pinch of salt, and sauté for 6–8 minutes until lightly browned and starting to soften.
- Add the onion and bell pepper and cook for 3 minutes, then stir in the garlic for 30 seconds until fragrant.
- Add the ground pork, breaking it up with a spoon, and sauté for 5–6 minutes until no pink remains and the pork reaches 160°F.
- Stir in the chopped Roma tomatoes, soy sauce, vinegar, brown sugar, black pepper, and 1/4 cup water; simmer 8–10 minutes until the tomatoes collapse into a saucy glaze and the potatoes are tender.
- Taste and adjust with a little more salt, vinegar, or sugar as needed, then fold in half the sliced green onion.
- Spoon the rice into two shallow bowls, top with the pork giniling sauté, and finish with the remaining green onion and extra black pepper.
