A flavorful and practical sheet-pan dinner with excellent cooking times and temperatures, but it requires significant adjustments to the salt levels and acid balance to succeed.

Suggested fixes
- Increase the total kosher salt to 2 1/4 teaspoons: use 1 teaspoon in the pork spice paste, 1 teaspoon tossed with the vegetables, and keep 1/4 teaspoon for the couscous.
- Reduce the lemon juice mixed into the couscous to 1 tablespoon, cutting the remaining lemon into wedges for serving.
- Add a dedicated initial preparation step to chop the vegetables, mince the garlic, zest/juice the lemon, and chop the parsley before starting to cook.
