Chef critique

Sri Lankan Chicken-Eggplant Curry

A coherent, well-sequenced weeknight curry with correct chicken presalting and a proper 175°F thigh target, held back mainly by under-salted vegetables, an optimistic eggplant browning step, and a low calorie estimate.

Score: 8/10

Suggested fixes

  • Raise the vegetable seasoning to about 6 g Diamond Crystal kosher salt when the vegetables go into the pan (total salt ~12.5 g), tasting the sauce before serving.
  • Sauté onion and eggplant first in the oil, then add the grated ginger and garlic for the last 30–60 seconds before the spices; add the tomatoes with the coconut milk so they hold shape better.
  • Either increase the oil for the eggplant slightly or brown the eggplant separately, and reserve a few pieces before simmering if you want them for garnish.
  • Adjust calories per serving to roughly 750–780.
  • Add a note to keep the covered rice warm off heat or to refluff and briefly reheat before plating.

Issues

  • medium / flavor: The vegetables (12 oz eggplant + 6 oz onion + 8 oz tomato ≈ 740 g) get only 2.5 g Diamond Crystal kosher salt, roughly 0.35% — well under the ~1% starting point. The finished curry will taste flat, and light coconut milk adds no salt to compensate.
  • low / cookability: 12 oz of eggplant in 1 tablespoon of oil over medium heat will absorb the fat and steam rather than brown in 6 minutes; the pan will also be crowded with onion and tomato at the same time.
  • low / flavor: Finely grated garlic and ginger are added at the start of a 6-minute sauté with the tomatoes and eggplant, where they risk scorching before the spices go in.
  • low / nutrition: 675 calories per serving looks low: 1 lb thighs (~650), 1/2 cup dry rice (~340), 2 tbsp oil (~240), 1 cup light coconut milk (~150) plus vegetables totals roughly 1,500 kcal, or ~750–780 per serving.
  • low / presentation: After a 14–16 minute simmer the eggplant is fully tender and the tomatoes have broken down, so "arranging several browned eggplant and tomato pieces on top" is not achievable as written.
  • low / clarity: The rice finishes about 25 minutes before serving and sits covered off heat with no instruction to keep it warm or reheat.

Strengths

  • Chicken thighs are presalted at 5.5 g Diamond Crystal for 1 lb (~1.25%) and pulled at 175°F, the right doneness for thigh meat, with a short rest.
  • Water, oil, and salt amounts split across steps add up exactly to the ingredient-list totals.
  • Prep (cutting/salting chicken, vegetables, rice, spice blend) comes before active cooking, and each step covers one coherent task.
  • Bullet lists are used only for the multi-ingredient vegetable prep and spice blend, and later steps refer concisely to "the prepared vegetables" and "the curry spice mixture".
  • Acid (2 tsp cider vinegar) and the layered spice bloom suit a Sri Lankan-style curry; 45 minutes, 2 servings, and ~$11 are plausible.
