  • In steps 4 and 7, replace '1 sliced green onion' with 'half the sliced green onions' and '2 tablespoons chopped basil' with 'half the chopped basil'.
  • In step 4, instruct the cook to mash the butter well and add the lemon juice a little at a time to help it emulsify without breaking.

Issues

  • low / clarity: Step 2 instructs the cook to slice 2 green onions and chop 1/4 cup of basil, but steps 4 and 7 call for '1 sliced green onion' and '2 tablespoons chopped basil'. This requires the cook to mentally divide a combined pile. It is clearer to say 'half the sliced green onions' and 'half the chopped basil'.
  • low / cookability: Step 4 asks to stir 1 tablespoon of lemon juice into 3 tablespoons of softened butter. That is a high ratio of liquid to solid fat, which may cause the butter to 'break' or weep unless mashed very vigorously. Adding the liquid slowly or slightly reducing its volume would make emulsification easier.
