Ginger-Glazed Chicken & Japanese Eggplant
A generally well-formatted recipe with excellent ingredient tracking and a good prep step, but the stir-fry method will overcrowd the pan and overcook the chicken, and the dish as a whole is significantly underseasoned.

Suggested fixes
- Change the stir-fry method: brown the chicken, remove it from the skillet to a plate, cook the eggplant (adding a splash of water if needed to help it soften), and return the chicken to the pan before adding the aromatics and glaze.
- Increase the Diamond Crystal kosher salt on the chicken to 1 1/2 teaspoons (approx 4.2g) to meet the 1.25% by weight guideline for 12 ounces (340g) of meat.
