Ginger-Glazed Sockeye with Grilled Eggplant
This recipe offers a delicious combination of flavors and a practical workflow, but it falters on the salmon execution. The lean wild sockeye is under-salted before cooking and instructed to be cooked far too long, which would result in burned skin and dry, overcooked fish. Adjusting the salt and lowering the target internal temperature will elevate this to an excellent weeknight meal.
Score: 6/10
Suggested fixes
- Increase the kosher salt for seasoning the salmon in Step 5 (and the overall ingredient list) to 1 teaspoon.
- Revise Step 8 to shorten the grilling time to 5 to 7 minutes total, and change the target internal temperature to 120°F to 125°F to prevent the lean sockeye from drying out.
- Convert the three-ingredient bulleted list in Step 5 into a continuous sentence within the prose.
Issues
- medium / flavor: The salmon is underseasoned during the initial seasoning step. 1/2 teaspoon of kosher salt for 1 pound of salmon provides less than half of the recommended 1.25% salinity by weight. The glaze added at the end does not penetrate the fish to substitute for proper pre-salting. Increase the salt on the salmon to 1 teaspoon.
- high / cookability: Cooking wild sockeye salmon skin-side down for 9 to 12 minutes at 425°F will likely burn the skin to a crisp. Additionally, cooking lean wild salmon to an internal temperature of 145°F will result in severely overcooked, dry fish. Reduce the total grilling time to 5 to 7 minutes and aim for an internal temperature of 120°F to 125°F for medium-rare to medium doneness, which preserves the texture of sockeye.
- low / clarity: Step 5 uses a bulleted list for exactly three ingredients (oil, salt, and pepper). The recipe guidelines state that bulleted lists should only be used for mixtures of more than three ingredients. This should be written as prose.
Strengths
- Efficient workflow with the grill and stovetop tasks overlapping nicely.
- Concise referencing of prepared mixtures (ginger-mirin glaze, eggplant dressing) in later steps.
- Flavor profile sounds very appealing, and the plating instructions yield an attractive dish.
