Chef critique
Basque Sockeye with Summer Piperade
This is an appealing and elegantly structured dish with perfect ingredient math. However, the recipe falls short on seasoning, requiring a significant increase in salt for both the vegetables and the salmon. Additionally, the target temperature for the lean sockeye salmon will result in overcooked fish.
Score: 6/10
Suggested fixes
- Increase the total kosher salt to 2 1/2 teaspoons: allocate 1 teaspoon to the salmon, 1 teaspoon to the piperade, and 1/2 teaspoon to the green beans.
- Lower the target internal temperature for the salmon to 125°F (medium-rare) and advise home cooks that it will continue to cook slightly while resting.
- Reduce the oven time for the salmon slightly to 6-8 minutes since the skillet and piperade are already hot and sockeye cooks very quickly.
Issues
- high / flavor: The recipe uses 1 1/4 tsp of kosher salt for roughly 40 ounces of food. Following weight-based salinity guidelines (1.25% for salmon, 1% for vegetables), the dish is substantially underseasoned.
- medium / cookability: The instructions call for cooking sockeye salmon to 145°F. Sockeye is very lean and will be dry and overcooked at this temperature; 120°F to 125°F is a much better target for this species.
Strengths
- Flawless tracking of ingredient quantities and divisions across all instruction steps.
- Efficient and logical workflow that makes good use of parallel prep and cooking.
- Excellent finishing touches using butter, fresh herbs, and sherry vinegar to elevate the vegetables.
