Chef critique
Malaysian Coconut Chicken & Eggplant Curry
A flavorful and appealing weeknight curry with well-structured parallel cooking steps and clear, complete instructions. However, the recipe must be revised because the meat and vegetables are substantially underseasoned during the active cooking stages, and the amount of oil provided for sautéing the eggplant is impractically low.
Score: 7/10
Suggested fixes
- Increase the kosher salt on the chicken to 3/4 teaspoon and on the vegetables to at least 1/2 teaspoon during the initial sautéing steps.
- To prevent the dish from becoming overly salty once the meat and vegetables are properly seasoned, reduce the fish sauce to 1 to 2 teaspoons, or instruct the user to add it to taste at the end.
- Increase the neutral cooking oil in Step 4 to at least 1 to 2 tablespoons, or instruct the cook to add a splash of water and cover the pan briefly to help the eggplant steam-soften.
- Update the total kosher salt and cooking oil quantities in the ingredient list to reflect these changes.
Issues
- high / flavor: The chicken and vegetables are severely underseasoned during initial cooking. Based on a 1.25% salt by weight starting point, 12 oz (340g) of chicken requires about 4.25g of salt (approx. 3/4 to 1 tsp kosher salt), but receives only 1/4 tsp. Similarly, 16 oz (450g) of eggplant and onion require about 4.5g of salt (1% salinity), but receive only 1/4 tsp. Fish sauce added later does not correct unseasoned meat.
- medium / cookability: Step 4 calls for cooking 12 oz of cubed eggplant and half an onion in just 1 teaspoon of oil. Eggplant is highly porous and will absorb this tiny amount of oil instantly, which will likely cause sticking or burning before the eggplant softens.
Strengths
- Excellent instruction flow that starts with prep and effectively uses parallel cooking for the rice and curry.
- Every ingredient mention includes the exact quantity used in that step.
- Good balance of aromatics, sweetness, and acidic finishing notes.
- Accurate time estimates, nutrition information, and cost estimates.
