Jerk Lamb Patties with Grilled Summer Squash

A flavorful and well-timed recipe with excellent adherence to food safety standards and ingredient tracking. However, it suffers from a few minor practical issues, such as trying to zest a cut lime and using raw lime juice in ground meat, alongside some robotic phrasing in the final step.

Score: 8/10

Suggested fixes

  • Modify Step 1 to instruct zesting the entire lime before cutting it in half.
  • Omit the lime juice from the lamb patties in Step 3 (use only the zest). Use the other half of the lime to create wedges for serving instead.
  • Rephrase Step 6 to say 'Divide the rice...' instead of referring to the 'cooked yield'.
  • Increase the kosher salt for the lamb patties to 1/2 teaspoon (and bump the total ingredient list kosher salt to 1 teaspoon).

Issues

  • medium / cookability: Step 1 instructs the cook to cut the lime in half, but Steps 2 and 3 require lime zest. It is very difficult to zest a citrus fruit after it has been cut.
  • medium / flavor: Adding acidic lime juice directly into the ground lamb mixture in Step 3 can denature the meat proteins and negatively affect the texture of the patties.
  • low / clarity: The phrasing 'cooked yield from 1/2 cup dry rice' in Step 6 is awkward and robotic.
  • low / flavor: 1/4 teaspoon of kosher salt may be slightly inadequate to properly season 12 ounces of ground lamb alongside the bold jerk spices.

Strengths

  • Perfect tracking of ingredient quantities across all steps, including divided ingredients.
  • Efficient use of time by having the cook prepare the lamb patties while the rice is simmering.
  • Includes accurate and safe cooking temperatures for ground lamb (160°F).
