Sri Lankan Coconut Chicken & Zucchini

A realistic, well-sequenced coconut chicken curry with accurate salt weights, water accounting, and correct thigh doneness; it needs a bit more cooking fat, slightly more salt in the sauce, a shorter zucchini simmer, and a fixed health note and "one-pan" claim.

Score: 8/10

Suggested fixes

  • Increase the oil to 1 tablespoon so the onion and ground spices bloom without scorching.
  • Raise the braise salt to about 4.5-5 g fine sea salt (reduce the finishing lime salt if needed) to season the zucchini and coconut sauce properly.
  • Reduce the zucchini simmer to 4-6 minutes, or add it after the chicken has simmered longer, to keep it tender-crisp.
  • Delete the health note or replace it with a real swap and tradeoff, e.g. full-fat coconut milk for richness versus light for fewer calories at some loss of body.
  • Split step 6 into one step for searing the chicken and building the coconut sauce and a second for adding the zucchini and finishing.
  • Change the description from "one-pan" to "one-pot curry with a side of rice" to match the method.

Issues

  • low / clarity: The description calls this a "one-pan dinner," but the method uses two pans (a saucepan for rice and a wide saucepan for the curry).
  • medium / flavor: 2 teaspoons oil is scant for softening 8 oz of diced onion and blooming a tablespoon-plus of ground spices; the spices can scorch and the curry loses richness (light coconut milk adds little fat).
  • low / flavor: 3 g salt in the braise is light for 1 lb zucchini plus 13.5 oz coconut milk and 1/4 cup water; the sauce will taste flat. Roughly 4.5-5 g at that stage (1% of the zucchini plus the liquid) is a better starting point.
  • medium / nutrition: The health note references replacing flatbread that never appears in the recipe and uses the vague claim "gluten-light"; it describes no real swap or tradeoff.
  • low / cookability: Step 6 bundles searing the chicken, building the sauce, salting, adding zucchini, and checking doneness into one long step; the zucchini addition and finish would read more clearly as its own step.
  • low / timing: 7-9 minutes of simmering will likely take the zucchini past "tender-crisp" to soft; 4-6 minutes is closer to the stated texture.

Strengths

  • Salt is specified by weight and type, presalted on the chicken at about 1.25%, and the 5.5 g + 2 g + 3 g split adds exactly to the 10.5 g listed.
  • Water is fully accounted for (1 1/2 cups for rice + 1/4 cup in the curry = 1 3/4 cups listed), and rice-to-water ratio and rest are correct.
  • Chicken thighs taken to 175°F is the right doneness for that cut, given concisely with a short rest.
  • Prep steps come first, bullet lists are used appropriately for multi-item prep and the spice blend, and later steps refer to "the spice mixture" and "the prepared zucchini" without restating amounts.
  • Time, servings, and ~640 calories per serving are plausible for the ingredients; cooking_methods matches the stovetop technique.
