Tuscan Coho with Basil-Caper Gremolata
This recipe features excellent seasoning calculations and temperature targets, but the potatoes are roasted too long after smashing and the gremolata contains too much acid for the delicate basil.

Suggested fixes
- In step 4, use only the lemon zest (and perhaps 1 teaspoon of juice) for the gremolata to protect the basil's bright color and balance the flavor; serve the remaining lemon cut into wedges.
- In steps 5 and 6, skip the separate 8-minute crisping step. Instead, smash the potatoes, immediately surround them with the seasoned green beans and tomatoes, and roast everything together for 10-12 minutes while the salmon cooks.
Issues
- medium / flavor: The gremolata calls for the juice of an entire lemon (about 2-3 tablespoons) but only 1/2 tablespoon of olive oil. This creates a very harsh acid-to-fat ratio, and soaking finely chopped basil in that much acid will quickly turn the leaves brown and mushy.
- medium / timing: The fingerling potatoes roast for 15 minutes, are smashed, roast for 8 more minutes to crisp, and then roast for another 10-12 minutes with the other vegetables. At 450°F, 18-20 minutes of roasting after smashing will likely burn the potatoes.
