Armenian-Style Lemon Chicken & Zucchini

A well-structured, weeknight-friendly recipe with excellent parallel workflow and healthy ingredients. However, it suffers from severe under-seasoning and misallocation of salt, leaving the vegetables completely unseasoned. A few minor adjustments to the oil quantity and seasoning sequence will make this a 10/10 dish.

  • Increase the total kosher salt to at least 1.5 teaspoons.
  • Adjust the instructions to season the zucchini and tomatoes with a pinch of salt when they are added to the skillet.
  • Keep the lemon zest in the chicken marinade, but reserve all the lemon juice to deglaze and finish the dish at the end so the chicken can brown properly.
  • Increase the total olive oil to 2.5 or 3 tablespoons to ensure proper sautéing and pan lubrication.
