Gochujang Pork Rice Bowls

This is an expertly crafted, easy-to-follow recipe. The workflow is logical, making great use of concurrent cooking times, and all components are well-seasoned and cohesive. Only very minor tweaks to salt quantities and ginger phrasing are suggested.

Score: 9/10

Suggested fixes

  • Consider removing the 1/4 teaspoon kosher salt from the ground pork in step 5, relying entirely on the soy sauce and gochujang to season the meat.
  • Adjust the phrasing in step 1 to 'peel and finely grate fresh ginger to yield 1 teaspoon'.

Issues

  • low / flavor: The 10 ounces of ground pork is seasoned with 1/4 teaspoon kosher salt before being tossed in a sauce containing 1 1/2 tablespoons of soy sauce and 2 tablespoons of gochujang. Because both gochujang and soy sauce are very high in sodium, the additional kosher salt could make the pork overly salty. However, this is largely mitigated by serving the pork with lightly seasoned rice, so it remains a minor issue.
  • low / clarity: Step 1 instructs to 'Finely grate... 1 teaspoon fresh ginger', but the ingredient list already defines it as '1 teaspoon, finely grated'. It may be clearer to instruct the cook to peel and grate a piece of fresh ginger to yield the 1 teaspoon.

Strengths

  • Perfectly structured bulleted lists for mixtures, set off by blank lines.
  • Excellent concurrent timing, allowing the cook to prepare the quick pickles and pork while the rice simmers and rests.
  • Very clear and helpful visual cues, such as stirring until the sauce bubbles and forms a glossy glaze, and lowering heat to prevent scorching.
  • Amounts used across the steps sum perfectly to the total quantities in the ingredient list, including the divided water and salt.
