Basque-Style Chicken with Roasted Piperade
This is a well-written, easy-to-follow sheet pan recipe with fantastic formatting and step structure. However, the specified salt amounts are far too low for the quantity of meat and vegetables, which will result in a bland finished dish. Fixing the seasoning levels will make this an excellent recipe.
Score: 7/10
Suggested fixes
- Increase the total kosher salt in the ingredient list to at least 2 1/2 teaspoons.
- In step 3, increase the kosher salt used for the chicken to 1 teaspoon.
- In step 4, increase the kosher salt used for the vegetables to 1 1/2 teaspoons.
Issues
- high / flavor: The dish is substantially underseasoned. One-half teaspoon of kosher salt for 1 pound of chicken and 1/2 teaspoon for over 2 pounds of fresh vegetables is far below standard ratios. A baseline of 1.25% by weight for boneless meat and 1% for vegetables would require closer to 3 teaspoons total (depending on the brand of kosher salt).
Strengths
- Excellent separation of the vegetable preparation into a single, cohesive early step.
- Bullet lists are perfectly formatted and used appropriately for mixtures of more than three ingredients.
- Smart use of sherry vinegar applied after roasting to brighten the dish and deglaze the pan juices.
- Instructions refer back to prepared components concisely.
